Roasted Carrot Soup
It's soup season, and I-promise-to-eat-healthier-this-year resolution season, so I've combined the two to create a flavorful Roasted Carrot Soup recipe. Like all good vegetable-centric soups this one is easy to make, healthy, and amazingly tasty. The addition of potatoes instead of heavy cream provides thickness and creaminess to the soup without unnecessary calories, so if you've made a plan to east healthier this year, this soup is for you.

Garnishes are a great opportunity to play up your favorite flavors, and to add a variety of textures to a smooth, velvety soup!
