Hi there, it’s Lauren here, your Everyday Designer.  I don’t know about you, but April was a bit of beast for us. We made a temporary move while we’re waiting to close on our home. That, combined with working full time and caring for my five month old daughter (another full time job in itself), I am in dire need of some R&R. With Mother’s Day approaching (my first as an honoree!) I’ve been trying to think of how to celebrate the moms in my life without wearing myself out in the process—because we tend to do that as moms, right?! I don’t know about you but I’ve been wearing myself out and this Mother’s Day all I want is a nice, peaceful, no-fuss day with my family. Let’s celebrate the beauty in simplicity, shall we?

5 Ingredient Goat Cheese and Egg Souffle Cups from Sweet Phi

You can’t beat a great soufflé (err..no pun itended).  This delish dish has only 5 ingredients.  Now that’s my kind of recipe!  Whip these up for brunch and you’ll have a fantastically simple main dish. Serve with fruit salad and call it a day.

I saw a shirt that says “Brunch because mimosas” and I don’t think truer words have ever been spoken. The only thing simpler than a 4 ingredient mimosa is a 4 ingredient mimosa where 2 of the ingredients are optional garnishes. Insert hair flip emoji.

Ah, the galette, or as I like to call them, pies for lazy people. Basically you just put the filling in the center of the pie crust, fold up the edges, bake and you’re done. This is like a grown-up version of the Mother’s Day craft you used to make at school back in the day. I’m guessing your mom will love whatever you make for her now just like she used to. Present your handiwork with a nice bottle of wine and bonus, you both can cheers to her health and happiness.
